What is Coconut Oil?

Coconut oil is a plant-based oil extracted from the meat of mature coconuts harvested from the coconut palm tree (Cocos nucifera). It has been a dietary and cultural staple in tropical regions for centuries, particularly in the Philippines, Indonesia, and India. Commercially, coconut oil is available in two forms: virgin (unrefined) and refined (RBD – refined, bleached, and deodorized).

Refined coconut oil, commonly used in the food industry and by households, is free from the coconut’s natural aroma and flavor. It is produced through steam refining and filtration, making it stable for high-heat cooking, deep frying, and food processing. With a high proportion of saturated fats (primarily lauric acid), it offers excellent oxidative stability and shelf life, even in warm climates without refrigeration.

In the Philippines, coconut oil is a primary cooking oil for both domestic and commercial use due to its availability, stability, and neutral taste. It is also widely used in baking, snack manufacturing, and processed food production.
